Cedar Ridge Port Cask Finish Iowa Bourbon Whiskey / 43%/ – Cedar Ridge Distillery is located in Swisher, just south of Cedar Rapids, the second largest city in the state of Iowa. It was founded by Jeff and Laurie Quint in 2005 as the first licensed distillery in Iowa since prohibition. The Quints grow corn themselves and source the remaining grains. Cedar Ridge bourbon is distilled from mash composed of 75% corn, 10% rye and 15% malted barley and aged in # 3 char American oak barrels for three to four years. The company experiments with finishing maturation, here we have Cedar Ridge bourbon finished in ex-port casks for 12 months. The whiskey is released in small batches, our bottle was part of Batch #6.
Nose: fruity, black cherries, blackberries, blood oranges, caramel, toffee, vanilla custard, cinnamon, clove and oak.
Palate: cherry preserve, blackberries, Damson plums, vanilla, caramel, white pepper, nutmeg, cinnamon and a pinch of salt.
Finish: medium long, with notes of mixed berries marmalade, caramel, vanilla, allspice and oak.
