Bimber London Single Malt Ex-Bourbon Casks Batch No. 3 /51,6%/ –
Bimber Distillery was founded in West London in 2016 by Dariusz Plazewski, Polish immigrant, whose grandfather made his own bootleg spirits in the communist era (‘Bimber’ translates from Polish to ‘Moonshine’). Bimber is small and unique operation; it uses grain from a single farm, floor malts the barley and extends fermentation time to 148 hours. Bimber single malt whisky debuted in September 2019 and initial release sold in just few hours. Here we have the third batch of Bimber single malt, whisky aged exclusively in American oak ex-bourbon barrels and bottled of natural color and without chill filtration at 51.6% abv. The whisky was released in the summer of 2021 with an outrun of 5000 bottles.
Nose: vanilla cream, honey, butterscotch, oranges, tangerines, pineapples, apricots, coconut flakes, marzipan, milk chocolate and delicate herbal and oaky notes.
Palate: rich, honey, toffee, vanilla, caramel, coconut milk, tropical fruits, chamomile tea, dash of white pepper and candied ginger and toasted oak.
Finish: medium long, with notes of oranges, grapefruits, bananas, vanilla, honey, mixed fresh herbs and oak.
