The GlenAllachie 12 years old, Virgin Oak Series, French Oak Finish /48%/ – Virgin Oak Series was released in October 2020 and consists of three limited editions of 12 years old GlenAllachie single malt whiskies – Spanish Oak Finish, French Oak Finish and Chinquapin Oak Finish. Each whisky included in the series was originally aged in American oak barrels, then was finished in virgin oak casks for approximately 18 months. Commenting on the new range Billy Walker said: “With this new range I wanted to explore and showcase the different range of flavors that can be created with different types of virgin oak (…) I wanted to explore what happens when you use different derivatives of virgin oak – for example with different terroir, different drying period and different toasting and charring levels”. The whisky presented here was finished in hogsheads made of French oak sourced from the Haute-Garonne region at the foothills of Pyrenees. The fine-grained wood was air dried for 15 months.
Nose: honey, butterscotch, mocha, vanilla, milk chocolate, coconut milk, orange zest, nutmeg, bunch of garden herbs and oak.
Palate: toffee ad butterscotch, pink grapefruits, oranges, honey, caramel, cappuccino, nutmeg, dash of cinnamon and oak. Finish: medium long, with notes of honey, caramel, cocoa, cinnamon, nutmeg and oak tannins.
