Cotswolds Distillery (D.2015 B.2019) PX Sherry Butt (England) / 59,7%/ – Cotswolds Distillery was founded in 2014 by David Szor. He acquired an estate with two stone buildings and installed a pair of stills for whisky distillation (one is named Mary and the other Janis) and a separate still for making gin. The distillery uses locally grown barley, which is malted at the Britain’s oldest working maltings in nearby Warminster. Production started in September 2014 and three years later Cotswolds single malt was launched. In the early 2018 the distillery started experimenting with rye whiskey. The whisky presented here was distilled on March 13, 2015 and aged in American oak ex-Pedro Ximénez sherry butt for over four years. Bottled at natural strength of 59.7% abv on June 12, 2019 with an outrun of 672 bottles.
Nose: very fruity, black cherries, ripe plums, black currants, raisins, brown sugar, vanilla custard, cappuccino and hints of cinnamon.
Palate: follows the nose, cherries, plums, figs, dates, dark chocolate, gingerbread, cinnamon, dash of nutmeg and sherried oak.
Finish: medium long, with notes of dark fruits, sultanas, sweet pastries, sweet spice and oak.
