Caol Ila 8 years old (D.2010, B.2019) Douglas Laing’s Old Particular The Elements Collection /58,4%/ –
The Old Particular range was introduced in September 2013 by Fred Laing, soon after he parted ways with his brother and business partner Stewart splitting the portfolio of Douglas Laing & Co. In the late 2018 the company announced an extension to the range, the Elements Collecton, which celebrates the role of four Elements – Fire, Air, Earth and Water – in whisky making cycle. The packaging for these special bottlings depicts an intricate illustration of each of the four Elements. The first two releases Fire and Air featured Craigellachie and Cameronbridge whiskies respectively; the third in line, Earth is represented by Caol Ila. The whisky distilled in November 2010 was aged in refill hogshead for over 8 years and bottled at cask strength (58.4% abv) in May 2019 with an outrun of 319 bottles.
Nose: peat smoke, forest floor, moss and ferns, malted barley, green apples, lemons, white pepper, smoked oysters and charred oak.
Palate: slightly oily, peat smoke, lemon grass, lemon peel, apples, pears, gooseberries, white pepper, licorice, green olives and hints of cigar ash.
Finish: fairly long, with notes of vanilla, salt and pepper, iodine, charred oak and whiffs of peat smoke.
