A key element of its character is time. It matures over many years, sometimes several or even dozens of years, in carefully selected sherry, bourbon or wine casks. It is these that give the spirit its depth, structure and multidimensionality of flavours.

Premium alcohol is often bottled without cold filtration and without artificial colouring. As a result, it retains its natural colour and full flavour. The difference between standard whisky and premium whisky becomes particularly clear when tasting it is not only the more intense flavour, but also the longer and more complex finish.
An excellent example of these characteristics is Aberfeldy 15 Year Old Exceptional Cask Dom Whisky Edition. This whisky was matured in only one selected sherry cask and the number of bottles produced is limited, in this case to 546. Bottled at a natural colour with a cask strength of 58.8%, it delivers the fullness of aroma, intensity and richness of flavour typical of exceptional single cask editions, confirming all the defining characteristics of premium whisky. The edition is currently available in House of Whisky shops.
