Sonoma Bourbon Whiskey / 46% – Sonoma County is best known as wine producing region but it is also home to several craft distilleries of which at least half a dozen makes whiskey. Sonoma Distilling Company was founded in 2010 by Adam Spiegel.It is grain to glass operation, where very stage of production is handled in-house, including the milling, mashing and fermentation of grains, distillation in copper alembic pot still, aging, barreling and bottling. Sonoma Bourbon is distilled from mash composed of 70% corn, 25% wheat (both grains sourced form California and Canada) and 5% malted barley sourced form Wyoming. The whiskey has been aged in charred white American oak barrels for a minimum of 15 months.
Nose: young and fresh, vanilla, toffee, marzipan, freshly baked bread, lemon pepper and hints of oak shavings.
Palate: pretty sweet, caramel, vanilla, toffee, buttered popcorn, hard candy, dash of pepper and cocoa powder and oak.
Finish: not too long, with notes of vanilla, caramel, pepper, touch of almonds and oak.
