Sonoma County Rye / 48% / – Sonoma County Distilling Company was founded in 2010 by Adam Spiegel, who previously “worked with great master distillers and blenders”. It is grain to glass operation, where very stage of production is handled in-house, including the milling, mashing and fermentation of grains, distillation in copper alembic pot still, aging, barreling and bottling. Adam sources non-GMO California grains and smokes malted barley locally in Petaluma with California cherry wood. Sonoma County Rye is distilled from mash of 80% rye from California and Canada and 20% malted rye sourced from United Kingdom. The whiskey is aged in charred white American oak barrels for a minimum of 15 months with majority of blends above two years.
Nose: fresh rye bread, vanilla, caramel, cinnamon, white pepper, dill, apple cider, oak shavings and freshly mowed grass.
Palate: slightly spirity, toasted rye bread, caramel, vanilla, cinnamon, cardamom, fresh herbs and touch of grilled artichokes.
Finish: medium long, with notes of pepper, aniseed, dill, burnt sugar, cinnamon and oak.
