The Ultimate Whisky Company was founded by Han and Maurice van Wees in Amersfoort, Holland in 1994. The van Weeses bottle their whisky unchill-filtered and of natural color either at cask strength or at 46% abv and each bottle is numbered with cask details stated on the label. Since 1994 close to a 1000 expressions have been released under ‘The Ultimate’ label. Here we have one of the most recent releases, Bunnahabhain 12 years old. The whisky distilled on February 13, 2007 was aged in first fill sherry butt no. 592 and bottled at natural strength of 58.1% abv and without chill-filtration on January 9, 2020 with an outrun of 595 bottles.
Nose: distinctive sherry notes, hazelnuts, cocoa powder, toffee, vanilla, raisins, prunes, black cherries, hints of tobacco and leather and fading hint of smoke.
Palate: rich, black currants, black cherries, prunes, mixed nuts and almonds, dark chocolate, nutmeg, cloves, sherry, oak and a touch of leather.
Finish: pretty long, with notes of dark chocolate, mixed berries marmalde, nutmeg, pepper, sherry and oak.
