New whisky for tasting in Jastrzębia Góra
KOVAL Single Barrel Whiskey Four Grain / 47% – Koval, the first legal Chicago distillery since prohibition, was founded in 2008 by Robert and Sonat Birnecker. Before starting a distilling career Robert was the Deputy Secretary for the Austrian Embassy in Washington DC and Sonat lecturer and writer on Jewish Studies and German Jewish Cultural History. Koval is 100% grain-to-bottle operation that sources its grains from an organic co-op in the Midwest. The Birneckers developed number of recipes, some of them truly innovative. Koval Four Grain is distilled from mash of oat, rye, wheat and malted barley and aged on average for two years in heavily charred small barrels (30 gallons capacity) sourced from Minnesota. The whisky scored gold medal at the 2012 International Whisky Competition. All Koval whiskeys are bottled as single barrel.
Nose: lots of bananas, vanilla custard, brown sugar, hard candies, honey, dash of cinnamon, hay and bunch of dried flowers.
Palate: smooth and pretty sweet, banana bread, honey, vanilla, maple syrup, licorice, cinnamon, pepper and oak.
Finish: medium long, with notes of honey, vanilla, licorice, pepper and hints of oak.
