The Macallan Edition No. 2 / 48,2% – In the late 2015 Macallan Distillery launched Edition No. 1, a forerunner of the new series of limited bottlings. Edition No. 2 followed next fall, a creative collaboration between Master Distiller Bob Dalgarno and the three Roca brothers, co-founders of El Cellar de Can Roca in Catalonia, twice named the best restaurant in the world. Together they selected 7 sherry casks from 4 cooperages in Spain, puncheons, butts and refill hogsheads made of Spanish and American oak.
Joan Roca, head chef, picked first and second fill Diego Martin casks for its green wood and toffee flavors;
Jordi Roca, pastry chef, selected first and second fill Vasyma American oak casks showing light vanilla and citrusy notes;
Joseph Roca, a sommelier, picked first fill José Miguel Martin casks with spicy ginger notes;
finally Bob Dalgarno, the Macallan Master Distiller chose first fill Tevasa cask, which extracted dried fruit and sherry notes.
