New irish whiskey for tasting in Jastrzębia Góra

Waterford Organic Gaia 1.1 Irish Single Malt Whisky /50%/ – Waterford Distillery was founded by Mark Reynier, the former co-owner of Bruichladdich in 2015. The year before he purchased Waterford Brewery and converted it into distillery. Waterford is equipped with two pot stills and one column still and its priority is malt whisky. In the summer of 2020, the company introduced The Singe Farm Origin Series and Arcadian Series followed in the fall with Organic Gaia 1.1 as its forerunner. This first certified Irish organic whisky was distilled in 2016 from organic barley supplied by six farmers, all of which use biodynamic farming. The whisky was aged in four types of casks: 42% first fill American oak barrels, 17% virgin American oak, 23% premium French oak and 18% Vin Doux Naturel.
Nose: malty, fruity and earthy, moist hay and soil, porridge, orange zest, pineapple, figs, salted caramel, sweet pastries, rose water, peppermint and hints of nutmeg.
Palate: oily and pretty spicy, black pepper, clove, lemon grass, vanilla, butterscotch, milk chocolate, pears, cherries, quince marmalade and oak.
Finish: medium long and pretty dry, pepper, mixed dried herbs, grapefruits, cocoa and oak.
